Slow Cooker Beef Short Ribs

The most tender, fall-off-the-bone beef short ribs you’ll ever have! These slow cooker short ribs are so easy to make. With just 15 minutes of prep, this recipe is low maintenance and will come out AMAZING every time!

What are Beef Short Ribs?

Short ribs are a cut of beef taken from the brisket, chuck, plate or rib areas of the cow. They contain a short portion of the rib bone surrounded by meat. Beef short ribs are tender and full of flavour. When slow-cooked, the fat will moisten the meat, making it fall off the bone.

How to Make Slow Cooked Short Ribs:

3 tablespoons olive oil
3 carrots, chopped
1 onion, diced
2 to 3 cloves of garlic, minced
1/2 cup of all-purpose flour
2 kg beef short ribs
Salt and pepper, to taste
1 cup beef broth
1 cup dry red wine – substitute with an additional cup of beef broth if you prefer to not cook with wine
1/4 cup Worcestershire sauce
2 tablespoons tomato paste

Prep your ingredients:
Chop the carrots, onion, and garlic. In a pan, add 1 tablespoon of olive oil. Sauté the carrots and onions over medium heat for 2-3 minutes. Add in the garlic and cook for an additional 2-3 minutes. Remove from pan and add to slow cooker.

Sear the short ribs:
Lightly flour the short ribs on all sides. Season with salt and pepper. Add 2 tablespoons of olive oil to a pan. Add the short ribs and sear on all sides on high heat until they are nice and brown. Remove from pan and add to slow cooker.

Add wine to deglaze the pan. Scrape up any brown bits from the bottom of the pan. Boil for 2 minutes then add beef broth, Worcestershire, salt and pepper. Stir in tomato paste.

Slow Cook:
Make sure to add all ingredients to your slow cooker. Cook on low for 6-8 hours. Optional: when ready, top with a sprig of rosemary.
