- 2 medium potatoes, peeled and diced into cubes

- Salt & pepper to taste
- 2 tbsp olive oil (or vegetable oil)
Instructions:
- Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef chunks in batches to avoid overcrowding the pot. Brown the meat on all sides (this should take about 5-7 minutes). Once browned, remove the beef and set it aside.
- Cook the Aromatics: In the same pot, add the chopped onion and garlic. Stir them around for about 2-3 minutes until the onion becomes soft and translucent. Stir in the tomato paste and cook for another minute to deepen the flavors.
- Simmer the Stew: Return the browned beef to the pot and pour in the beef broth. Scrape the bottom of the pot with a wooden spoon to lift any browned bits (that’s where a lot of the flavor is!). Add the carrots, potatoes, thyme, and season with salt and pepper. Bring the stew to a boil.
