1 1⁄2 cups minced onions

2 tablespoons oil

1 tablespoon lemon juice

c teaspoon dried rosemary

1⁄4 teaspoon dried thyme

1⁄4 teaspoon dried oregano

1⁄4 teaspoon dried basil

1⁄4 teaspoon paprika

1 tablespoon minced garlic

1⁄2 teaspoon salt

1⁄4 teaspoon pepper

1 lb pork tenderloin

For many, pork tenderloin is the absolute premium part of the animal. When choosing pork tenderloin, choose a piece of meat with a bright pink colour. Most tenderloins weigh about a pound, which will serve 3 to 4 people.

This special pork is tender and juicy and seasoned just right. It cooks equally well on the BBQ.  Watch your cooking time carefully so the pork does not dry out.

DIRECTIONS

  1. Mix the first 11 ingredients.
  2. Rub over the pork.
  3. Put on a rack in a shallow roasting pan.
  4. Bake, uncovered, at 400* for 45 minutes.
  5. Remove from oven, cover with foil and let set for 10 minutes.
  6. Slice into servings.
